The answer may always be slightly elusive, but in this series I spotlight certain benchmark beers, much imitated but rarely equaled to see if I can determine what makes them classics. Marble gets a lot of credit, too, sticking largely with the British playbook but adding ever more hop saturation.

It’s not just an adjective for how good it is—it’s won more British brewing medals than any beer since its conception—but because even as it has grown into a national brand, it has always been an outlier. It is around half the strength of 18th- and 19th-century IPAs, and lacks the heavy hopping rate that, as the story goes, allowed those beers to survive months at sea to reach India. The two currents, the old cask tradition and American-inspired craft beer, started coming back together.

If someone were to ask me what IPA they should have if they had never had one before I would most certainly point them in the direction of Jaipur. The cleaner yeast profile meant less perceived fruit character, but actually a slightly higher finishing gravity for more body and sweetness in the face of higher carbonation.Well, as with many of their beers, the naming comes from a more sentimental side of the Thornbridge brewers. We balance these with a great English malt base of Low Colour Maris Otter from Norfolk that helps keep the beer light and drinkable with enough sweetness to keep it all in harmony.

We came across it at The Old Fish Market in Bristol last night, a Fuller’s pub which often has one or two guest beers from larger independents.I think there is also a lot to be said for quality and consistency, our brewers are incredibly passionate about the beer and ensuring each and every pint tastes exactly as it should be. It was the first American-hopped beer to win the coveted prize, and Wickett was struggling to keep up with demand. He insisted on a small recipe change, albeit only for kegs and bottles, from a traditional Yorkshire yeast strain to an American one. A new edition of Brew Britannia: the strange rebirth of British beer came out in July 2017, with corrections and a new format .

It is an icon and a friend, a craft beer standard and the beginning of a trend, that would spawn a whole host of IPAs, Double IPAs and — probably — Milkshake IPAs (though Jaipur has always had a bright and gleaming clarity about it). By the time Jim and Emma Harrison bought Thornbridge Hall in 2002, whatever home-brewing the residents might have conducted in the 17th or 18th century was long gone. Next, they were tasked with brewing something a little different, an IPA which packed a punch in terms of both flavour and ABV. Jaipur's hoppiness builds in the mouth and bursts with powerful citrus fruit flavours, culminating in a remarkably smooth finish and making it a deliciously drinkable IPA.So here it is, officially, the best way to enjoy Britain’s most award winning brew (and many other IPAs!
